A user profile was deleted and with it, the documents. Are they recoverable?

Only if you have a backup. If you have written any new files of any time (or the system has) to the same hard drive, the contents off the deleted files may already be beyond recovery. If the user profile elements are not in the Recycle Bin, then you might try an undelete tool, but it is unlikely that it will provide any usable results.
